Semolina cake

In my attempt to bake a “healthy” cake, I have substituted refined flour with semolina. The result turned out be good so sharing the recipe here:

Ingredients:

2 eggs

1 cup semolina

4 tbsp refined flour

2/3rd cup sugar

2/3rd cup oil

3-4 tbsp milk

1tsp baking powder

1 tsp vanilla essence

 

Steps:

  1. Sift semolina, flour and baking powder at least 3-4 times to incorporate air
  2. Whisk eggs till soft peak stage, add sugar and beat
  3. Pour in vanilla essence, oil. Mix
  4. Gradually add flour and mix using a spatula so that you don’t knock off the air from cake mix. Add milk.
  5. Pour into a cake mould or muffin mould.
  6. Bake at 150 celsius for around 30 minutes -baking time depends on your oven so keep a check by piercing a tooth pick
